As promised ...
Yield: 15-18 fritters
Preparation Time: 5 minutes
Cooking Time: 4 minutes each batch
Ingredients
2 ripe bananas
¼ cup brown sugar
2 tablespoons sugar
¼ teaspoon cinnamon
¼ teaspoon pumpkin pie spice
1 cup flour
7 ounces beer (Coronita is the perfect size!)
Salt
Peanut oil, for deep frying
Directions
In a bowl mash together the bananas, sugars, cinnamon and pumpkin pie spice, set aside. In a large bowl add flour a pinch of salt and whisk in the beer until slightly thicker than pancake batter. Gently fold in the banana mixture and let rest 5-10 minutes.
Meanwhile, in a large pot bring oil temperature to 360 degrees so when adding the fritters, the temperature rests at 350 degrees. Once the oil is ready, using a small ice cream scoop or large table spoon, gently drop dough into the oil. Fry until golden brown on both sides, flipping once, about 4 minutes total. Remove to a paper towel-lined plate. Serve with Peanut Butter Caramel Sauce, recipe follows.
Peanut Butter Caramel Sauce
Ingredients
½ cup butter (1 stick)
½ cup light brown sugar
½ cup heavy cream, room temperature
½ cup peanut butter
Salt
Directions
In a sauté pan on medium heat add butter and sugar. Whisk while melting and continuously whisk until the granules have melted and everything is smooth. Turn off the heat and slowly pour in the heavy cream while whisking until smooth. Add the peanut butter and turn the heat back on to low to help it melt into the caramel sauce while whisking. Remove from heat, serve warm.
